Green Bean Casserole

Ingredients
- 1 lb Laura's Lean Ground Beef
- 2 lbs Fresh green beans (trimmed)
- 8 ozs Baby Bella mushrooms (sliced)
- 1 Yellow onion (thinly sliced)
- 2 tbsps All-purpose flour
- 2 cups 2% milk
- 1/4 cup Parmesan cheese
- 5 ozs 2% Greek yogurt
- 1 tsp Salt
- 1 tsp Black pepper
- 1 tsp Garlic powder
- Crispy onions for topping

Preparation
1. Bring a pot of water to a boil. Prepare an ice water bath. Place the green beans in the boiling water and cook just until just tender, about 3-5 minutes. Plunge the green beans into an ice bath to stop them from cooking.
2. In a large skillet, sauté ground beef, onion, and mushrooms over medium heat. Season with salt, pepper, and garlic powder. Add in flour. Slowly add in the milk. Cook for about 10 minutes over medium heat. The sauce should bubble and thicken. Once it thickens, turn off the heat. Mix in the Greek yogurt.
3. Transfer half of the boiled green beans to a baking dish. Spread half of the ground beef mixture over the top. Repeat with the remaining halves of green beans and ground beef. Top with parmesan cheese and broil on high for 2-3 minutes. The cheese should be slightly melted and just golden brown. Remove from the oven and top with crispy onions.
