Quiche with Asparagus and Beef


  • 1/2 lb Laura's Lean Ground Beef
  • 1 small onion (chopped)
  • 1 tbsp dried dill
  • 1 lb cooked asparagus ( chopped into small pieces, reserving 3 spearheads for garnish)
  • 4 eggs
  • 1 cup skim milk
  • 1/2 tsp Dijon mustard
  • 3 ozs mild cheese (grated)
  • 1 9 inch pie shell (pre-baked)


1. Preheat the oven to 400ºF.

2. In a large, nonstick skillet, heat the Laura's 92% Lean ground beef with onion until beef is cooked and onion is softened, about 5 minutes. Remove from heat and let cool. Mix in dill. Mix in asparagus. Halve reserved spearheads lengthwise.

3. Whisk eggs with milk and mustard.

4. Sprinkle about half the cheese over the crust. Top with meat mixture. Carefully pour in egg mixture. Sprinkle top with remaining cheese. Place in oven. Cook about 30 minutes, until set.

5. Remove from oven and cool at least 10 minutes before serving. Garnish with asparagus spearheads, one for each serving wedge. Slice and serve.
