Tikka Masala Pot Pie

Ingredients
- 1 tbsp Extra-Virgin Olive Oil
- 1 Small Onion (Diced)
- 2 Medium Carrots (Diced)
- 1 lb Laura's Lean Beef
- 2 cups Cauliflower Florets ((Cut into bite-sized pieces.))
- 1 cup Frozen Peas
- 1 pkg Tasty Bite Tikka Masala Simmer Sauce ((7oz package))
- 1/2 cup Water
- 1 Frozen Puff Pastry Sheet (thawed (from 1 [17.3-ounce] package))
- 1 Egg (Large)

Preparation
Instructions:
- Preheat the oven to 400°F. Coat the insides of four, 4-inch ramekins with nonstick cooking spray. Line a small baking sheet with parchment.
- Heat the oil in a large skillet over medium heat. Add the onion and carrots and cook, stirring occasionally, until softened, about 5 minutes.
- Add the ground beef and cook, stirring to crumble, until browned, about 5 minutes. Drain any excess fat, set skillet back over heat and add the cauliflower and peas. Stir in the Tasty Bite Tikka Masala Simmer Sauce and water and cook to blend flavors, about 5 minutes.
- Meanwhile, unroll puff pastry dough onto a lightly floured surface. Using a 4-inch cookie cutter, cut dough into 9 rounds. Combine the egg with 1 tablespoon water and whisk to combine with a fork. Brush egg wash over rounds.
- Portion beef mixture among prepared ramekins. Top each with a round of puff pastry and place any extra rounds on the prepared baking sheet. Bake until pastry is golden-brown, about 20 minutes for pies and 10 to 15 minutes for extra rounds.
- Let cool 10 minutes before enjoying.
