Picnic Ground Beef Cheeseburger Pasta Salad

Ingredients
- 1 lb Laura's Lean Ground Beef
- 1 tbsp Olive oil (plus splash)
- 1/2 Sweet onion (diced)
- 1 pkg Rotini pasta (8-ounce)
- 1/2 cup Cherry tomatoes (halved)
- 1/4 cup Red onion (chopped)
- 1 cup Cheddar cheese (shredded)
- 1/2 cup Dill pickles (chopped)
- 1 cup Romaine lettuce (chopped)
- 3 cloves Garlic (minced)
- Salt and pepper to taste
- DRESSING:
- 2 tbsps Mayonnaise
- 1 1/2 tbsps Ketchup
- Salt and pepper to taste

Preparation
1. Start by boiling the pasta.
2. Pour the olive oil into a pan over medium heat. Sauté the onion and garlic with salt and pepper until soft and fragrant.
3. Add in the ground beef and cook through. Add some more salt and pepper.
4. Drain the pasta and add to a large bowl to set aside. Add a splash of olive oil to the pasta to avoid sticking.
5. Chop the tomatoes, red onion, pickles, and lettuce.
6. Combine the ketchup and mayo until smooth in a small bowl.
7. Once the pasta and ground beef have cooled, add the ground beef mixture to the pasta.
8. Then add in the tomatoes, red onion, pickles, lettuce, and cheddar cheese. Combine everything.
9. Pour on desired amount of the dressing. Enjoy!
