Everything But The Bagel Taquitos

Ingredients
- 1 lb Laura's Lean Ground Beef
- Shredded Mexican Style cheese
- Wheat & corn flour tortillas (something durable so they don't break)
- Avocado oil spray
- 1 Small yellow onion
- 1 can Fire-roasted diced green chiles (small can)
- Fresh cilantro
- Everything But The Bagel seasoning (Trader Joe's)
- Pico de Gallo, guacamole, Cotija cheese, and lime for serving

For 12oz beef products reduce serving size by 1/4.

Serving size based on 1 cup (242g)
Preparation
1. Dice onion into small pieces
2. Combine with green chiles, ground beef, and Everything But The Bagel seasoning
3. Cook until beef is no longer pink, and onion is fragrant
4. Drain excess grease from beef and place in a bowl
5. Spray both sides of tortilla with avocado oil
6. Scoop beef mixture onto one side of the tortilla
7. Top with Mexican style cheese
8. Roll and place in air fryer basket, seam side down
9. Repeat until desired number of taquitos are made
10. In batches, cook in air fryer at 390ºF for 5 minutes, flip, and cook for another 3-5 minutes until crispy (make sure tortillas aren't overlapping in air fryer basket)
11. Serve with sour cream, Pico de Gallo, guacamole, cilantro, and Cotija cheese. Sprinkle with additional Everything But The Bagel seasoning to taste.
