Chilaquiles with Roasted Verde Salsa

Ingredients
- 1 lb Laura's Lean Ground Beef (92% lean)
- 3 Tomatillos (whole)
- 1/4 Red onion
- 1/4 Jalapeño (seeded)
- 1 Avocado (sliced)
- 1 Lime (juiced)
- 1 pkg Taco seasoning
- 1 pkg Yellow corn tortilla chips
- 1 tbsp Olive oil
- Pico de Gallo, Cojita Cheese for topping

For 12oz beef products reduce serving size by 1/4.

Preparation
1. Place tomatillos, red onion, and jalapeño in the air fryer. Roast at 400° for 10 minutes. Transfer air-fried ingredients to a food processor, add in 1 avocado and juice of 1 lime. Blend until smooth. Set aside.
2. In a non-stick skillet over medium-high heat, add olive oil and ground beef, stirring until almost cooked through. Add in taco seasoning and cook until no longer pink. Remove from skillet.
3. Add verde salsa to the skillet and cook until hot. Add in tortilla chips, and toss to coat. Transfer coated tortilla chips to a dish, topping with ground beef. Use toppings as desired.
