Sweet and Sour Porcupine Meatballs

Ingredients

  • 1 lb Laura's 96% Lean Ground Sirloin
  • 2 small onions (1 finely diced and 1 sliced)
  • 1 clv garlic (minced)
  • 1/2 tsp ground ginger
  • 1 cup cooked long grain rice
  • 1 large red pepper (cored, seeded and sliced)
  • 12 baby carrots (halved lengthwise pepper)
  • 1/4 cup rice wine vinegar
  • 1/4 cup brown sugar
  • 2 tbsp tomato paste
  • 2 tbsp soy sauce
  • 2 tsp cornstarch
  • 1/2 tsp water
  • Optional garnish: chopped cilantro

Preparation

1. Heat oven to 350°F. Mix beef with diced onion, garlic, ginger and cooked rice. Shape into 28 meatballs and place in baking dish.

2. Place sliced pepper, sliced onion and carrots in bowl. Add rice wine vinegar, brown sugar, tomato paste and soy sauce. Mix cornstarch with water and stir into liquid in bowl.

3. Pour vegetables and all liquid over meatballs. Cover dish with foil, sealing it well. Bake for 35 minutes. Remove foil and bake another 10 minutes, letting juices thicken.

4. Remove from oven and stir to coat the vegetables and the meatballs with the sauce. Serve immediately, garnished with cilantro if desired.
