Plant-Based Pita Burger

Ingredients

  • 2 Laura's Plant-Based Burger
  • 2 Roma tomatoes (diced)
  • 1 English cucumber (diced)
  • 1/4 cup Fresh parsley (chopped)
  • 1 tbsp EVOO
  • 1/2 Lemon (juiced)
  • 1/2 tsp Dried oregano
  • 1 tbsp Vegetable oil
  • 2 Pita bread (cut in half crosswise)
  • 1/4 cup Hummus
  • 2 Lettuce leaves
  • Salt and pepper to taste

Preparation

1. In a medium bowl, combine the tomatoes, cucumber, parsley, olive oil, lemon juice, salt, and pepper. Stir to combine and set aside.
 
2. Place a large skillet over medium heat.  Sprinkle the burgers with the oregano and pat to press the herbs into the burgers.  Add the 1 tablespoon of vegetable oil followed by the burgers.  Cook the until heated, about 3 minutes per side.  Cut each burger in half.
 
3. Spread the inside of each pita half with 2 tablespoons of hummus. Place a burger half in each pita half along with an even amount of the cucumber salad and a lettuce leaf.  Enjoy!
