Plant-Based Arugula and Caramelized Onion Burger

Ingredients

  • 2 Laura's Plant-Based Burgers
  • 1 tbsp Vegetable oil (plus one teaspoon)
  • 1/2 Large onion (thinly sliced)
  • 1 1/2 tbsps Balsamic vinegar
  • 2 slices Cheddar cheese (vegan or non-vegan)
  • 2 Hamburger buns
  • 1/2 cup Baby arugula (loosely packed)
  • 2 Tomato slices
  • Salt and pepper to taste

Preparation

1. Place a medium skillet over medium heat.  Add the 1 teaspoon vegetable oil followed by the sliced onions, salt, and pepper. Cook the onions, stirring frequently, until they begin to brown around the edges, about 7 minutes.  Add the balsamic vinegar and cook until almost all of the vinegar evaporates, about 2 minutes.  Set aside.
 
2. Place a large skillet over medium heat.  Add the 1 tablespoon of vegetable oil followed by the burgers.  Cook the burgers until heated, about 3 minutes per side. Top each burger with a slice of cheddar and cook until the cheese has melted.
 
3. Transfer each burger to a bun.  Top each with an even amount of caramelized onions, ¼ cup arugula, and a tomato slice.
