Spicy Beef Noodles

Ingredients

  • 1 Pound(s) Laura's 92% Lean Ground Beef (or 96% Lean Ground Round)
  • 1/2 Cup(s) diced red bell pepper
  • 1/2 Cup(s) shredded carrots
  • 2 Clove(s) garlic (minced)
  • 2 Teaspoon(s) grated fresh ginger
  • 1 Cup(s) low-salt (fat-free beef broth)
  • 1/4 Can(s) peanut butter
  • 2 Tablespoon(s) low-sodium soy sauce
  • 1/2 Teaspoon(s) dried crushed red pepper
  • 8 Ounce(s) vermicelli (cooked)
  • 1/4 Cup(s) Sliced green onions
  • 2 Tablespoon(s) sesame seeds (toasted)
  • Chopped peanuts (optional)

Preparation

1. Cook beef in a large nonstick skillet over medium-high heat 5 minutes or until beef is browned. 
2. Add red pepper and next 7 ingredients and sauté 6 to 8 minutes or until vegetables are tender. Toss beef mixture with hot pasta, green onions, sesame seeds and chopped peanuts, if desired. Serve immediately.
