Easy Jambalaya with Beef

Ingredients

1 lb
Laura’s 92% Lean Ground Beef (or 96% Lean Ground Round)
1⁄2 lb
turkey sausage (sliced)
1  
small onion (chopped)
1 c
chopped celery
2 clv
garlic (minced)
1⁄2 c
chopped green pepper
2 cn
(14 ½ -ounce) low-salt beef broth
1 cn
(14 ½ -ounce) Cajun-style stewed tomatoes (undrained and chopped)
1⁄2 c
chopped fresh parsley
5 1⁄2 t
Creole seasoning
1⁄2 t
ground red pepper
2 c
uncooked long-grain rice
   
Hot sauce and parsley sprigs (optional)

Instructions

1. Cook first 6 ingredients in a large Dutch oven 5 minutes or until beef is browned and vegetables are tender; drain. 
2. Stir in broth and next 4 ingredients; bring to a boil. 
3. Stir in rice. 
4. Cover, reduce heat and simmer 25 minutes or until rice is tender. 
5. Top with hot sauce and parsley sprigs, if desired.

Notes

Cooking Tip: You may need to add more hot sauce for your taste. Other options for a spicier jambalaya are adding a hot turkey sausage or andouille sausage and more fresh ground cayenne pepper -- it will give this recipe plenty of heat.
