Ingredients
1/2 pound Laura's 92% Lean Ground Beef or 96% Lean Ground Round
2 teaspoons Italian seasoning, divided
2 small yellow squash, thinly sliced
1 small red bell pepper, cut into 2-inch pieces
1/2 small onion, chopped
2 cloves garlic, minced
2 tablespoons balsamic vinegar
1 teaspoon olive oil
3/4 cup pizza sauce
1 (12-inch) refrigerated pizza crust
1/2 cup shredded mozzarella cheese, divided
Directions
1. Cook ground beef and 1 teaspoon Italian seasoning over medium-high heat 5 to 7 minutes or until beef is browned.
2. Toss beef together with squash, remaining Italian seasoning, red pepper and next 4 ingredients in a large mixing bowl; spoon into a 13 x 9-inch baking dish. Bake at 500°F for 20 minutes, stirring once.
3. Spread pizza sauce over crust. Sprinkle 1/4 cup cheese over crust. Top with roasted vegetable mixture, and sprinkle evenly with remaining shredded cheese.
4. Bake at 450°F for 10 minutes or until pizza crust is lightly browned and cheese is melted. Serve immediately.
Makes 6 servings.
Cooking Tip: Can’t find your pizza cutter? Kitchen shears are a great way to cut through pizza without scratching your pizza pan. Using a dark, seasoned pizza pan instead of a shiny one will result in a superior crust.
