Italian Roast

Ingredients
1 (2 1/2-pound) Laura’s Lean Top Round Roast
1/4 teaspoon kosher salt
1/2 teaspoon freshly ground pepper
2 teaspoons dried Italian seasoning
3 garlic cloves, minced
1 large onion, finely chopped
1 cup low-salt, fat-free beef broth
3/4 cup dry red wine
1 (15-ounce) can tomato sauce
1 (14.5-ounce) can diced tomatoes
1 (6-ounce) can tomato paste
1 teaspoon sugar
1/4 teaspoon crushed red pepper
Linguine and grated Parmesan cheese (optional)

Directions
1. Preheat oven to 325°F. Season roast with salt, pepper, Italian seasoning and garlic. Place in a roasting pan with onion and next 7 ingredients, stirring well.
2. Bake, covered, at 325°F for 1 hour 15 minutes to 1 1/2 hours or until desired degree of doneness, basting occasionally with tomato sauce. Cover and let rest 10 minutes. Cool and thinly slice. Serve with linguine noodles and Parmesan, if desired.

Makes 8 to 10 servings.
