Beer Braised Roast

Cook time: 1 1/2 hours
Ingredients
2 teaspoons chili powder
1 teaspoon ground cumin
1 teaspoon paprika
1 teaspoon freshly ground pepper
1/2 teaspoon kosher salt
1 (3-pound) Laura’s Lean Sirloin Tip Round Roast
1 medium onion, thinly sliced
2 garlic cloves, minced
1 (12-ounce) bottle light beer
1 1/2 cups chili sauce
1/4 cup apple cider vinegar
1/4 cup dark brown sugar
Directions
1. Combine first 5 ingredients in a small bowl; rub over roast. Place in a large Dutch oven coated with cooking spray, with onion and garlic. Sauté onion 5 minutes while browning roast on each side. Add beer, chili sauce, vinegar and brown sugar, stirring well; bring to a boil. Cover, reduce heat and simmer 1 1/2 hours, basting occasionally or until roast is tender.
Makes 8 to 10 servings.
