Three Pepper Steaks with Basil Aioli
Prep Time: 5 minutes
Chill Time: 1 hour, if desired
Cook Time: 20 minutes
Ingredients
2 teaspoons garlic powder
2 teaspoons lemon pepper
2 teaspoons freshly cracked black pepper
1/4 teaspoon kosher salt
1/2 teaspoon red pepper
4 (11/2-inch-thick) Laura's Lean Rib Eye Steaks
1 teaspoon olive oil
Basil Ailoli (below)
Directions
1. Combine first 5 ingredients in small bowl. Brush steaks with olive oil and rub with pepper mixture. Cover and chill 1 hour, if desired.
2.Grill steaks, covered with grill lids, over medium-high heat (350°to 400°) about 8 to10 minutes on each side or to desired degree of doneness. Serve with Basil Aioli.
Broiling Directions
Place steak on a rack of a broiler pan. Broil 3 to 5 inches from heat 6 to 8 minutes on each side or until desired degree of doneness.
Makes 4 servings.
Basil Aioli
Ingredients
1/2 cup low-fat mayonnaise
1/2 cup coarsely chopped fresh basil
3 garlic cloves, minced
1 teaspoon grated lemon rind
2 tablespoons fresh lemon juice
1 tablespoon Dijon mustard
1 teaspoon olive oil
Directions
1. Process all ingredients in a blender of food processor until smooth, stopping once to scrape down the sides.
Makes 1 1/4 cups.
Cooking Tip: The key to success with aioli is to work very slowly. It is also important to make sure all your ingredients including your cooking tools be at room temperature. Varying temperatures may encourage the sauce to separate.
