Homestyle Swiss Steak

Prep Time: 15 minutes
Cook Time: 50 minutes

Ingredients
1/4 cup all-purpose flour
1/2 teaspoon garlic salt
1/2 teaspoon pepper
1 pound boneless Laura's Lean Top Round Steak, cut into 1-inch pieces
2 teaspoons olive oil
1 cup chopped carrots
1 cup chopped celery
1 small onion, chopped
1 cup beef broth
2 (8-ounce) cans tomato sauce
1 teaspoon Italian seasoning
Hot cooked noodles or rice

Directions:
1. Combine flour, garlic salt and pepper; dredge steak into flour mixture.
2. Lightly flatten floured steak with a rolling pin.
3. Brown steak in hot oil in a Dutch oven over medium-high heat 6 minutes or until lightly seared on both sides; remove.
4. Add carrot, celery and onion and sauté 5 minutes.
5. Add broth, tomato sauce and Italian seasoning and steak back to Dutch oven.
6. Cover and simmer 45 minutes, stirring occasionally or until steak is done and vegetables are tender.

Makes 4 to 6 servings.

Cooking Tip: Searing is browning meat quickly by subjecting it to very high heat (around 500 degrees) either in a skillet, under a broiler or in a very hot oven. The object of searing is not to seal in the meat's juices as some will claim, but to caramelize the juices and form a "crust". When searing the steak in this recipe, be sure to keep an eye on it. Too much time searing can cause the steak to burn.
