Steak-French Onion Soup

Cook time: 40 minutes

Ingredients
1 pound Laura's Lean Top Round (may use Eye of Round, Sirloin Tip Round or Flank Steak), cut in 1-inch cubes
2 pounds yellow onions, thinly sliced
1 tablespoon all-purpose flour
8 cups low-salt, fat-free beef broth
1/3 cup white wine
2 teaspoons chopped fresh thyme
1/8 teaspoon salt
1/4 teaspoon freshly ground pepper
6 (3/4-inch-thick) slices French bread, toasted
11/2 cups Swiss or Fontina cheese, shredded

Directions
1. Brown beef in a lightly greased large Dutch oven 5 minutes or until browned; drain.
2. Add onion and flour, mixing well. Add beef broth, white wine, thyme, salt and pepper. Bring to a boil; reduce heat and simmer, partially covered 30 minutes.
3. Place 6 ovenproof bowls on a baking sheet. Ladle soup into bowls. Place 1 toasted bread slice in each bowl and top with 1/4 cup shredded cheese. Broil 51/2 inches from heat about 3 to 5 minutes or until cheese is melted and crusty around the edges.
