Spicy Grilled Meatloaf

Ingredients
1 pound Laura's 92% Lean Ground Beef or 96% Lean Ground Round
1/2 small onion, finely chopped
2 tablespoons plain dried breadcrumbs
2 tablespoons Dijon mustard
1 large egg, lightly beaten
1 teaspoon Italian seasoning
1/4 teaspoon salt
2 teaspoons minced chipotle peppers in adobo sauce or 1 1/2
teaspoons dried chipotle seasoning, divided
6 tablespoons ketchup
Directions
1. Combine first 7 ingredients and 1 teaspoon chipotle peppers in adobo sauce or 1/2 teaspoon dried chipotle seasoning. Shape into a loaf. Wrap in aluminum foil and chill 1 hour or overnight.
2. Poke fork-size holes on both sides of foil. Grill meatloaf in foil package, covered with grill lid, over medium-high heat 10 to 15 minutes on each side or until a meat thermometer inserted into thickest portion registers 155°F.
3. Stir together ketchup and remaining chipotle peppers or chipotle seasoning. Spoon sauce evenly over meatloaf and cover with aluminum foil for 5 minutes to heat through. Serve immediately.
Makes 4 to 6 servings.
Cooking Tip: Cut down your prep time by making the meatloaf and sauce the night before. It stores well in the refrigerator and can be put on the grill at any time. Chipotle peppers in adobo sauce are dried, smoked jalapeno peppers in seasoned tomato sauce. The heat in the peppers comes from the seeds. You'll find these canned peppers in the Mexican food section.
