Spicy Portuguese Beef Steak Kabobs
This recipe compliments of the National Cattlemen's Beef Association.
Ingredients
1 1/2 pounds Laura's Sirloin Top Butt, about 1 1/4" thick
1 large red bell pepper, cut into 1" pieces
Seasonings:
2 tablespoons olive oil
2 tablespoons chopped fresh cilantro
1 tablespoon cayenne pepper sauce or 1/2 tablespoon hot pepper sauce
1 clove garlic, minced
Optional:
1/4 to 1 teaspoon crushed red pepper
Directions
1. Cut beef steak into 1 1/4" cubes. Combine seasoning ingredients in large bowl. Add beef; toss to coat.
2. Alternately thread beef and bell pepper evenly onto six 10" metal skewers.
3. Place kabobs on rack in broiler pan so surface of beef is 3 to 4 inches from heat. Broil about 9 to 12 minutes for medium rare to medium doneness, turning once. Season with salt, if desired.
For the Grill: 1. Place kabobs on grid over medium, ash-covered coals.
2. Grill, uncovered, about 8 to 11 minutes for medium rare to medium doneness, turning once.
3. Garnish with cilantro if desired.
Makes 6 servings.
Cooking Tips: You may use fresh cilantro sprigs and 1/4 to 1 teaspoon crushed red pepper to add even more flavor!
