Beef Skewers with Pineapple-Jalapeño Sauce

Ingredients
1 pound Laura's Lean Flank Steak
1 cup pineapple juice, divided
2 tablespoons light soy sauce
1 tablespoon minced fresh ginger
1 teaspoon toasted sesame oil
1/4 teaspoon crushed red pepper
1/2 cup jalapeño jelly
Directions
1. Thinly slice steak across the grain.
2. Whisk together 1/2 cup juice, soy sauce, and next 3 ingredients. Pour over steak and place in a shallow dish or zip-top plastic bag. Chill at least 2 hours.
3. Remove steak from marinade and thread onto 10- to 12-inch metal or bamboo skewers accordion style.
4. Grill, covered with grill lid, over medium-high heat 5 minutes on each side or until desired degree of doneness.
5. Combine remaining 1/2 cup juice with jalapeño jelly in a small glass microwave-safe bowl. Heat at HIGH 30 seconds or until jelly melts, stirring until blended. Cool. Serve with skewers.
Makes 6 to 8 servings.
Cooking Tips: Be sure to marinate the flank steak at least 2 full hours. This gives the meat time to tenderize and absorb wonderful flavor.
