Laura's Lean Beef Pepper Steak
Ingredients
1 pound Laura's Lean Eye of Round
1/2 cup onion, cut into strips
1/2 cup red pepper, cut into strips
1/2 cup green pepper, cut into strips
Marinade:
1/2 cup olive oil
1/8 cup reduced sodium soy sauce
1 1/2 teaspoon sugar
3/4 teaspoon garlic, minced
3/4 teaspoon ginger, minced
1/8 cup white wine or sherry
1/8 cup scallions, minced
Freshly ground black pepper
Directions
1. Cut beef into strips and add to marinade ingredients. Marinate meat for at least two hours in the refrigerator.
2. Remove meat from marinade and stir-fry in a hot wok or skillet with 1 tablespoon of olive oil.
3. Add strips of onion and peppers and cook until vegetables are done, about 1 minute.
4. Drain off olive oil.
Makes 4 servings.
Cooking Tips: Water or low-sodium beef stock may be substituted for the wine. You may serve this dish with rice or pasta.
