Lemon-Lime Kabobs

Cook Time: 10 minutes

Ingredients
1 (6-ounce) container nonfat plain yogurt
1/4 cup lemon juice, divided
2 teaspoons lime juice
2 teaspoons horseradish
2 tablespoons chopped fresh Italian parsley
3/4 teaspoon lemon pepper, divided
1 1/2 pound Laura’s Lean Round Steak, cut into 20 cubes (1-inch each)
10 thin lemon wedges
10 thin lime wedges
1 tablespoon olive oil
3 garlic cloves, minced
1/2 teaspoon kosher salt

Directions
1. Combine yogurt, 2 tablespoons lemon juice, lime juice, horseradish, parsley and 1/4 teaspoon lemon pepper, stirring well. Cover and refrigerate.
2. Heat grill to high. Assemble 6 long skewers, alternating beef cubes, lemon and lime wedge on each. Arrange skewers in a glass dish.
3. Whisk together olive oil, garlic, remaining 2 tablespoons lemon juice, salt and remaining 1/2 teaspoon lemon pepper in a small bowl. Pour marinade over skewers, turning to coat. Let stand 5 minutes.
4. Spray grill with cooking spray. Place skewers on grill; cover with grill lid, and cook, turning occasionally, 3 to 4 minutes on each side or until meat is cooked to desired degree of doneness. Serve with yogurt sauce.

Makes 6 servings.

Cooking Tip: If you are using wooden skewers they need to be soaked in water prior to use to ensure they won’t catch on fire.
