Herb-Crusted Steak with Tomato Relish
Prep Time: 20 minutes
Chill Time: 1 hour
Cook Time: 12 minutes
Ingredients
2 tablespoons chopped fresh rosemary
2 tablespoons chopped fresh basil
2 garlic cloves, minced
1/4 teaspoon salt
1/4 teaspoon pepper
1 teaspoon olive oil
1-1/2 pound Laura's Lean Flank Steak
Tomato Relish
Directions
1. Combine first 5 ingredients in a small bowl. Place steak in a large baking dish; brush both sides with olive oil and rub with herb mixture. Cover and refrigerate 1 hour.
2. Grill steaks, uncovered over medium-hot coals (350º to 400º) 6 minutes on each side or until desired degree of doneness. Cut steak diagonally across grain into thin slices. Serve with Tomato Relish.
Broiling Directions
1. Broil steak 5 1/2 inches from heat (with electric oven door partially opened) 5 to 7 minutes on each side or until desired degree of doneness.
2. Cut steak diagonally across grain into thin slices. Serve with Tomato Relish.
Makes 4-6 servings.
Cooking Tips: The herb mixture will act like a rub and help tenderize the meat. Please be sure to leave enough time for the meat to tenderize in the refrigerator.

Tomato Relish

Ingredients
2 cups cherry tomatoes, halved
1/4 cup freshly chopped basil
2 tablespoons balsamic vinegar
2 tablespoons chopped black olives
1 tablespoon olive oil
1/8 teaspoon salt
1/4 teaspoon freshly ground pepper
Directions
Combine tomatoes and remaining ingredients in a bowl. Serve with Herb-Crusted Steak.
Makes about 2 1/2 cups.
