Greek Egg White Omelet

Ingredients
3/4 pound Laura’s 92% Lean Ground Beef or 96% Lean Ground Round
3/4 cup salsa, divided
8 egg whites
2 tablespoons skim milk
1/2 teaspoon salt
1/2 teaspoon freshly ground pepper
Vegetable cooking spray
2 tablespoons crumbled feta cheese

Directions
1. Cook beef in a large nonstick skillet over medium-high heat 5 minutes or until beef is browned. Add 1/2 cup salsa and cook 2 minutes or until heated.
2. Whisk together egg whites with milk in a large bowl. Season with salt and pepper. Heat cooking spray in a 12-inch nonstick skillet over medium-high heat. Add egg whites and cook until nearly set, using a flexible heatproof spatula to repeatedly pull in side of omelet to allow uncooked egg to run underneath, 2 to 4 minutes.
3. Sprinkle beef mixture, feta cheese and remaining 1/4 cup salsa over the top. Gently slide omelet onto serving plate, folding it over by tipping skillet slightly.

Makes 4 servings.

Cooking Tip: When cooking eggs, cover them with a lid for the last 30 seconds or so. This will make the eggs very light and fluffy.
