Classic Beef Tips

Prep time: 5 minutes
Cook time: 15 minutes

Ingredients
1 pound Laura's Lean Beef Tenderloin, Strip or Ribeye, cut into 1 inch cubes
8 cloves garlic, lightly crushed and peeled (canned or dried garlic chips can be used)
3 tablespoons olive oil
salt and pepper to taste
1 tablespoon dry sherry or cooking wine

Directions
1. Combine meat and garlic (this may be done in advance).
2. Heat olive oil in a large heavy skillet until very hot.
3. Add garlic and meat mixture; stir-fry over high heat until brown and done as desired.
4. Sprinkle with salt and pepper, stir in sherry and transfer to serving dish with slotted spoon, leaving juices in skillet.
5. Deglaze pan with several tablespoons of water. Pour sauce over beef and garlic. Serve immediately with lots of fresh bread for dunking.

Makes 4 servings

Cooking Tip: The secret to crushing garlic is to lay your knife on the garlic clove and hit it softly until you hear the shell crack. The garlic should be crushed and the rest of the shell should come off easily.
