Dirty Rice with Jerk Seasoning

Prep Time: 10 minutes
Cook Time: 40 minutes

Ingredients
1/2 pound Laura's 92% Lean Ground Beef or 96% Lean Ground Round
1/2 medium onion, chopped
1/2 medium-size green bell pepper, chopped
2 teaspoons vegetable oil
3 garlic cloves, minced
1 1/2 cups long-grain rice
1 (15-ounce) can tomato sauce
1 (14-ounce) low-sodium beef broth
1 to 1 1/2 teaspoons jerk seasoning
2 green onions, thinly sliced

Directions
1. Cook beef in a large, deep skillet coated with cooking spray over medium-high heat 5 to 7 minutes or until beef crumbles and is no longer pink; drain and remove beef from skillet. Set aside.
2. Sauté onion and bell pepper in hot oil in skillet over medium-high heat 5 to 7 minutes or until onion is tender.
3. Add garlic, and cook 1 minute. Add rice and sauté 2 to 3 minutes. Stir in tomato sauce, broth, jerk seasoning, and beef; bring to a boil.
4. Cover, reduce heat, and simmer 20 to 25 minutes or until liquid absorbs, stirring once after 15 minutes. Stir in green onions and serve.

Makes 6 servings (as an entrée).

Cooking Tip: Cooking rice can be tricky. We recommend using a heavy pan with tight fitting lid to keep the steam inside. Make sure your heat is on low (simmer) or you will lose all of your liquid before the rice is fully cooked. Sometimes it's best not to lift the lid or stir the rice until the simmering time has elapsed. However in this recipe, stirring once works best for the rice.

Cooking Tip: Raw green onions have, in a small number of instances, been connected to food-borne illness. The only reliable way to eliminate this risk is to cook green onions thoroughly. Saute in a skillet for 2 mintues.
