Mediterranean Couscous Salad

Ingredients
1 pound Laura’s 92% Lean Ground Beef or 96% Lean Ground Round
1/2 small onion, chopped
2 cloves garlic, minced
1/2 teaspoon Greek seasoning
2 tablespoons lemon juice
1 (14-ounce) can fat-free low sodium beef broth
1 (8-ounce) box Israeli couscous
4 cups mixed lettuce leaves
1 cup sliced cherry tomatoes
4 green onions, chopped
1/2 yellow bell pepper
1/2 cup diced radishes
1 small cucumber, peeled and diced
3 tablespoons chopped fresh parsley
2 tablespoons chopped fresh basil
Balsamic vinegar, olive oil, crumbled feta cheese (optional)

Directions
1. Cook beef, onion and garlic in a large nonstick skillet over medium-high heat 5 minutes or beef is browned; drain. Add Greek seasoning and lemon juice, stirring well.
2. Bring beef broth to boil; add couscous and cook according to package directions.
3. Combine beef and couscous, stirring well.
4. Arrange lettuce on a serving platter. Top with beef, cherry tomatoes and next 6 ingredients. Drizzle with balsamic vinegar and oil and top with feta, if desired.

Makes 6 to 8 servings.

Cooking Tip: Choose flat leaf (Italian) parsley instead of curly parsley. It has more flavor.
