Beef-Tomato and Mozzarella Panini

Cook time: 11 minutes

Ingredients
1/2 pound Laura’s 92% Lean Ground Beef or 96% Lean Ground Round
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground pepper
4 (6-inch) pitas
4 tablespoons balsamic vinegar
3/4 cup fresh mozzarella cheese, thinly sliced
2 plum tomatoes, thinly sliced
1/2 cup fresh basil leaves
Vegetable cooking spray

Directions
1. Brown ground beef, salt and pepper in a large skillet 5 minutes or until beef is browned.
2. Brush one side of pita bread with 1 tablespoon balsamic vinegar. Add beef, mozzarella, tomato and basil.
3. Heat a large nonstick skillet or panini press coated with cooking spray over medium heat. Add pita to pan and top other side with cooking spray. Top with another heavy skillet or panini top and cook 3 minutes on each side or until golden. Repeat with remaining pitas.
