Old Fashioned Beef Pot Pie

Cook Time: 45 minutes
Ingredients
1 1/4 pounds Laura's Lean Ground Beef or Ground Round
1 small onion, chopped
1 cup chopped celery
1 cup peeled, chopped potato
1 cup frozen English peas and carrots, thawed and drained
1 (8-ounce) container sliced fresh mushrooms
1 cup beef broth (low salt)
1 tablespoon chopped fresh thyme
1/2 teaspoon salt
1/4 teaspoon crushed red pepper
1/2 package refrigerated pie dough
1 egg white
Directions
1. Brown ground beef and onion in a large skillet over medium-high heat until beef is browned and onion is tender; drain.
2. Stir in celery and next 7 ingredients. Bring to a boil; reduce heat, and simmer 15 minutes or until vegetables are tender.
3. Spoon beef mixture into a 2-quart casserole dish.
4. Roll pastry dough to 1/8-inch thickness on a lightly floured surface and place over beef mixture, trim, seal and crimp edges. Cut slits in pastry. Brush egg white over dough.
5. Bake at 400 F for 25 to 30 minutes or until golden, shielding pastry with aluminum foil during the last 5 minutes to prevent excessive browning, if necessary.
Makes 6 servings.
Cooking Tip: If you decide to use regular beef broth, you may only need ¼ teaspoon of salt. You may also substitute 1 teaspoon of dried thyme for 1 tablespoon of fresh thyme.
