Beef and Bean Chorizo Chili

Cook Time: 45 minutes
Ingredients
1 pound Laura's 92% Lean Ground Beef or 96% Ground Round
1/2 cup chopped chorizo sausage
Vegetable cooking spray
1/2 medium onion, chopped
1/2 medium-size green bell pepper, chopped
1 15-ounce can chickpeas, rinsed and drained
1 15-ounce can black beans, rinsed and drained
1 28-ounce can crushed tomatoes
1 28-ounce can diced tomatoes, drained
1 4-ounce can diced green chilies
1 teaspoon ground cumin
Hot cooked long-grain or basmati rice (optional)
Toppings: Fat-free sour cream, hot sauce, chopped fresh cilantro (optional)
Directions
1. Cook beef and chorizo in a Dutch oven coated with cooking spray over medium-high heat 10 minutes or until beef and sausage crumble and are no longer pink. Drain; remove beef mixture from pan.
2. Add onion and bell pepper to Dutch oven coated with cooking spray. Sauté over medium-high heat 5 to 7 minutes or until onion is tender.
3. Return beef mixture to pan. Stir in chickpeas and next 5 ingredients; bring to a boil. Reduce heat and simmer 30 minutes. Serve with rice and toppings, if desired.
Makes 8 to 10 servings.
Cooking Tip: This recipe simmers the chili for 30 minutes. For a more blended flavor continue to simmer for another hour. Be sure to either cover the chili or add more liquid as needed.
