Individual Cedar-Planked Peach BBQ Laura’s Lean Meatloaves

The summer heat doesn’t mean I don’t still crave the occasional comfort food of meatloaf. But I know I don’t want to crank up the oven to bake off the meatloaf. The solution? The grill, of course. And since I want to eat peaches as often as possible when they are in season, I want to make my own peach barbecue sauce. So I did. And then to top it all, since I loved the cedar planked steak from July, I decided I had to use the planks to cook these meatloaves on the grill. One, two, three: dinner’s done.

Prep Time: About 20 minutes
Cook Time 35 to 40 minutes (depends on heat of your grill)
Serves: 4

2 whole peaches, peeled and pitted
2 tablespoons honey
1 teaspoon instant coffee powder
1 teaspoon hoisin
1/4 teaspoon ground allspice
2 tablespoons sherry vinegar
1/4 cup panko bread crumbs
1/2 cup buttermilk
1 pound Laura’s Lean Beef 96% Lean Ground Sirloin
1 tablespoon ketchup
1 tablespoon mustard (any style)
1 tablespoon Worcestershire sauce
1/2 teaspoon salt
1/4 teaspoon ground pepper
1 clove garlic, minced
1/3 cup minced onion
1 egg
1/3 cup chopped parsley

1. Have one cedar plank soaking in water for at least 30 minutes before cook time. Make barbecue sauce: blend peaches with honey, coffee, hoisin, allspice and vinegar. Place in small saucepan, bring to boil, reduce to simmer and cook 5 minutes. Remove from heat.
2. While sauce is heating, place bread crumbs in small bowl and cover with buttermilk. In a large bowl, mix beef with ketchup, mustard, Worcestershire, salt, pepper, garlic, onion, egg and parsley. Add soaked breadcrumbs. Mix all well.
3. Shape into 4 small meatloaf shapes. Heat grill to high and place plank on grill for about 5 minutes. Flip grill and gently place meatloaves onto plank. Reserved half of peach barbeque sauce for serving. Brush meatloaves with remaining peach sauce. Reduce heat to medium-low, lower lid and continue cooking for 30 to 40 minutes, brushing with sauce about 3 more times before finishing cooking time.
4. Bring plank to table with meatloaves on it, and serve one per person, passing with reserved peach barbeque sauce.
