This is a version of the herb-y/garlicky sauce found in Argentina known as chimichurri. Use your favorite herbs and go heavy on the parsley. This is simple, quick and easy. You could make this for a crowd (you get plenty of sauce for people to enjoy in this recipe) almost on the spur of the moment if you’ve got some summer herbs at your kitchen steps or, as I have, in some containers on the patio/balcony.

3 cloves garlic, minced
1/4 cup onion, finely chopped
1/2 cup finely chopped fresh herbs (a mix of parsley mint, basil, chives, dill)
1/3 cup extra-virgin olive oil
2 tablespoons balsamic vinegar
1 teaspoon lemon zest
Juice of 1 lemon
1 tablespoon brown sugar
Salt and Pepper to taste (optional and not included in nutrition information)
8 ounces Laura’s Lean Beef Eye of Round, thinly sliced into small steaks
8 1-ounce heat-and-serve French-style rolls
1. Mix garlic, onion, herbs (use your favorite mixture; I cut herbs from my planters and went heavy on the parsley), olive oil, vinegar, lemon zest, brown sugar and salt and pepper (if using).
2. Lay steaks on flat surface and drizzle with 1 tablespoon of green sauce. Let steaks rest while grill heats to high.
3. Grill steaks to desired degree of doneness (if there’s room on grill, warm rolls; if not, warm rolls according to package directions). Remove steaks from grill and let rest 5 minutes.
4. Slice steaks into thin-as-possible pieces. For each serving, slice two rolls open. Divide slices from 1 steak onto each of two rolls and drizzle 1 teaspoon sauce onto each sandwich.
