Summer may be winding down, but the weather still means plenty of outdoor dining is left. Not only that, it’s also time to line up some tailgating menus for Sunday games. Keep it simple, stay outside and enjoy your guests. You can make the most of the final days of lingering sunsets or tailgating—take your pick–and sometimes you might decide to make the most of your time without even cooking.

This week, we turn to Laura’s Lean Beef Shredded Beef with Barbecue Sauce. Head to the grocery store. Pick up:

1 package (1 pound) Laura’s Lean Beef Shredded Beef with Barbecue Sauce
4 Deli Rolls
1 package finely shredded cabbage
1 bottle creamy Caesar dressing or Creamy Ranch dressing
2 large summer tomatoes
Fresh basil

Heat up the Shredded Beef with Barbecue Sauce in the microwave. While that heats, empty package of cabbage into a large salad bowl and dress lightly with Caesar or Ranch dressing. Toss and send to the table. Tailgating? Either bring the meat hot and keep it hot in a hot dish or fire up the grill, put it in a grill-safe aluminum pan, cover it with foil and heat until simmering hot. Keep it hot until everyone has had their fill.

Cut the tomatoes into thick slices and place on a platter. Top with a drizzle of balsamic vinaigrette, salt and freshly ground black pepper and plenty of chopped fresh basil.

Dinner is done.

This dinner is for four people, but there’s no reason you can’t make the same dinner for sixteen. And when people ask you what they can bring, ask for dessert. Your party is complete.

Now head out, enjoy the lasting sunset, the fireflies, the freedom and the friends.
