Try this for a light supper or for a brunch. You can mix it all ahead and bake it to serve, bake it ahead of time and warm it up, or even portion it into individual muffin tins.
Prep Time: About 10 minutes
Cooking Time: 12 minutes for muffins; 15 to 20 for dish
1/2 cup chopped onion
2 ounces lean ham steak, diced
2 cups cooked, chopped broccoli
1 pound 96% lean Laura’s Lean Beef ground round, cooked and crumbled
2 eggs, beaten
1 cup skim milk
2 ounces low-fat Swiss cheese, grated
1. Heat oven to 375F. Spray nonstick skillet with cooking spray. Add onions and ham; heat over medium-high heat, cooking until onions start to brown, about 5 minutes.
2. Combing onions and ham with broccoli and beef. Spoon into dish or nonstick muffin tins, dividing evenly. Combine eggs and milk in large measuring cup and pour over all (or evenly divide it for the muffin cups). Top with grated cheese (about 1 tablespoon per “muffin”).
3. Bake single dish about 15 to 20 minutes, muffin tins about 12 minutes—in either case, until eggs seem set and cheese is starting to brown. Remove and let sit about 5 minutes before serving.
