I thought I’d avoid a resolution type post, but I couldn’t help myself. We all just think this way as the New Year begins, don’t we? So I thought I’d resolve some things about what I will EAT this year. Here are five things I resolve to eat more of:
1. Kale. I resisted kale salad because I was sure it was crazy! In fact I was so late to the salad bowl, that other food writers were calling kale salad a fading trend when I DID start eating it. But it’s not going anywhere away from my table soon. I discovered it and I love it. I will also eat kale in other ways. Because frankly, I love it.
2. Fennel (the bulbs). Every time I eat fennel, I think why don’t I eat it more often? I eat it raw, roasted, braised. I am resolving to eat it MORE. Try it (check out fennel recipes like this braised fennel recipe from Marcella Hazan, who makes it great.)
3. Blueberries. Every study shows blueberries to be a superfood. I can get on board. And since they are not always in season, I’ve discovered frozen blueberries, which go great with yogurt and granola. One of my favorite breakfasts.
4. Speaking of yogurt, I’m starting to make my own Greek yogurt at home. This is a go-to breakfast for me, and when I don’t have it for breakfast, I often have it for lunch! Yogurt is simple to make, less expensive that store bought and tastes so much fresher. Try it. (Here’s a resource to get you started: http://www.makegreekyogurt.com.)
5. I resolve to try to repeat some recipes! Because I develop and create and test so many recipes during the year, my family rarely gets to enjoy even a favorite recipe a second time! I resolve to keep track of things that are gangbuster hits and make a few of them throughout the month.
