It’s been a while since I’ve listed some of my favorite blogs (and websites) to live by. With all this information at my fingertips (really, the world of information is just a click away), I still find myself getting stuck in a rut at times. I end up making a concerted effort to find new and interesting blogs—in particular, food blogs—to read. I read for many things. Inspiration, information and escape being chief among my reasons. Whatever your reasons may … continued…

This dish has the advantages of being quick to prepare and uses only 1 skillet (if you think ahead and make extra noodle earlier in the week). If you have to stretch this to feed more than six, add some more pasta. As with so many simple dishes, a big side salad completes the meal. It’s important to take the skillet off the heat when you whisk the sour cream into the stock—this keeps the sour cream from “breaking” (separating). September brings with it that great feeling of new beginnings: sharp new pencils, new crayons in a box, school shoes, a new year to do better (no matter how long ago that first day of school was, the feeling is still there come September) at everything, including renewed efforts at putting healthy meals on the table in hurried times. Ah, there’s the trick. Summer schedules (or lack thereof) are a thing of the past. Now, it’s all go, all the … continued…

I am pretty excited about the new Laura’s Lean Beef product, frozen meatballs, which come in 12-ounce resealable bags. A few for lunch? The entire bag for a family dinner? Who knows what will inspire me next.? This month we are planning Laura’s Lean Beef Meatball Mondays. Since I so often think of food in terms of cultural and ethnic dining, I am definitely using cuisines of the world as my jumping off point for my Meatball Mondays. The last … continued…
